The Six Ingredients

 

Rose hip — the dried fruit of the Rosa canina (dog rose), one of the most harvested wild plants in Bulgaria. Rose hip has a naturally tart, fruity flavor and is among the richest plant sources of vitamin C. It provides the tea’s backbone acidity and much of its deep color. The tart edge softens with steeping time and sweetening.

Hibiscus flower — the brilliant ruby-red contributor. Dried hibiscus (Hibiscus sabdariffa) gives the Wizard its dramatic color and a pleasantly sharp, cranberry-like tartness. How to Brew

 

Hot: Bring water to approximately 90–95°C (just off the boil). Place one tea bag in a mug and pour 200ml of water over it. Steep for 4–6 minutes — longer for a deeper color and more pronounced tartness, shorter for a gentler cup. Remove the bag; the color will be a deep ruby-red. Sweeten with honey or sugar to taste; the raspberry and apple notes become more prominent once the tartness of the hibiscus is balanced by a small amount of sweetness.

Cold / iced: Brew as above using slightly less water (150ml), allow to cool to room temperature, then pour over ice. The ruby color of the Wizard is spectacular over ice — clear, jewel-toned, and deep red. Alternatively, cold-steep overnight in the refrigerator: place one or two bags in 400ml of cold water and refrigerate for 8–12 hours. The result is a naturally sweet, gentle cold infusion with excellent color that requires no sweetening for most palates.
